Golden, crispy air fryer pork belly bites ready to be devoured.

As a lover of rich and flavorful Latin pork recipes, traditional chicharrones often come to mind. While the classic stovetop method for chicharrones involves marinating and deep-frying pork belly, our air fryer approach offers a dramatically easier, cleaner, and significantly faster alternative. These air fryer pork belly bites, reminiscent of the best chicharrones, boast an exquisitely crispy exterior that gives way to a tender, succulent interior. It’s truly a texture sensation that will leave you craving more! Whether you serve them as a show-stopping appetizer or as the star of your main course with beloved sides like Congri (Cuban black beans and rice) or Cuban black beans alongside fluffy white rice, this dish is guaranteed to be a hit.

Why the Air Fryer is Perfect for Pork Belly

The air fryer has transformed how we cook many dishes, and pork belly is undoubtedly one of its greatest successes. Traditional deep-frying requires a lot of oil, can be messy, and often leaves a lingering smell in your kitchen. The air fryer, however, uses circulating hot air to achieve a similar crispy texture with just a fraction of the oil. This not only makes for a healthier option but also simplifies the cooking process immensely. For pork belly, this means less time cleaning up and more time enjoying those perfect, crunchy-on-the-outside, tender-on-the-inside bites. The dual-temperature cooking method in this recipe is key to rendering the fat slowly before crisping it up, ensuring every piece is cooked thoroughly and achieves optimal texture.

Essential Ingredients for Crispy Pork Belly

Crafting perfect air fryer pork belly bites requires a handful of quality ingredients. Here’s a closer look at what you’ll need and why each element is important:

  • Pork Belly: The star of our dish! You’ll need approximately 1 lb of boneless pork belly. It’s crucial to cut it into uniform 1 or 2-inch cubes to ensure even cooking. Look for pork belly with a good balance of meat and fat layers for the best texture and flavor. The fat renders down beautifully, creating that signature crispy exterior.
  • Sazon: This is a powerful, aromatic Latin spice blend that adds incredible depth of flavor. Commonly found in the Hispanic section of most supermarkets, Sazon often contains ingredients like coriander, annatto, garlic, and oregano. If Sazon isn’t available, a good adobo seasoning can be a fantastic substitute, or you can create your own blend using a combination of garlic powder, onion powder, cumin, and a pinch of paprika.
  • Salt: Essential for seasoning the pork and enhancing all the other flavors. Adjust to your personal taste, but don’t skimp entirely, as salt helps draw out moisture and contributes to the crispiness.
  • Oregano: Adds an earthy, aromatic note that complements pork wonderfully, especially in Latin-inspired dishes.
  • Cumin: A staple in Latin cuisine, cumin brings a warm, savory, and slightly smoky flavor that pairs perfectly with pork belly.
  • Black Pepper: Provides a subtle kick and rounds out the spice profile. Freshly ground black pepper is always recommended for the best flavor.
  • Vegetable Oil: A small amount of oil helps distribute the seasonings and aids in achieving that initial browning and crispiness. Any neutral-flavored oil like canola or grapeseed oil will work.
  • Baking Soda: This might seem like an unusual addition, but it’s a secret weapon for achieving extra crispy skin and fat on pork. The baking soda alters the pH on the surface of the pork, helping it to brown and crisp more effectively. Don’t worry, you won’t taste it in the final product!

Easy Step-By-Step Instructions for Air Fryer Pork Belly

Follow these simple steps to create perfectly crispy and succulent pork belly bites:

  1. Prepare the Spice Blend: In a small bowl, combine your Sazon, dried oregano, salt, ground cumin, and black pepper. Mix them thoroughly to ensure an even distribution of flavor. This pre-mixing prevents clumps and ensures every piece of pork gets seasoned perfectly.
  2. Season the Pork Belly: Place your cut pork belly cubes into a larger mixing bowl. Pour the vegetable oil over the cubes, then sprinkle the prepared spice blend and the baking soda evenly over them. Using your hands (gloves recommended for easy cleanup!), mix everything together thoroughly, ensuring each piece of pork belly is well coated with the oil and spices. This crucial step ensures maximum flavor penetration.
  3. Prepare the Air Fryer: Lightly spray your air fryer basket with a nonstick cooking spray. This prevents the pork from sticking and makes for easier cleanup. Carefully arrange the seasoned pork belly cubes in a single layer within the basket. Avoid overcrowding the basket, as this can lead to steaming rather than crisping. If necessary, cook in batches.
  4. First Cook (Low & Slow): Cook the pork belly in the air fryer for 20 minutes at a lower temperature of 250 degrees F (120 degrees C). This initial slow cook is essential for rendering the fat slowly, making it tender and juicy without drying out the meat. It’s the secret to that melt-in-your-mouth texture.
  5. Second Cook (High & Crispy): Once the initial 20 minutes are up, carefully flip the pork belly pieces to ensure even crisping. Then, increase the air fryer temperature significantly to 400 degrees F (200 degrees C) and continue cooking for another 5-10 minutes. Keep a close eye on them during this stage, cooking until they reach your desired level of golden-brown crispiness. The exact time will depend on your air fryer model and the size of your pork belly pieces. Enjoy immediately for the best texture!

Expert Tips for Perfectly Crispy Air Fryer Pork Belly

Achieving restaurant-quality air fryer pork belly is simple with these expert tips:

  • Avoid Overcooking: While you want crispy pork belly, be mindful not to overcook it for too long, especially at the high temperature. Overcooking can lead to dry, tough meat instead of the desired juicy interior. Keep a watchful eye during the final crisping stage.
  • Room Temperature Start: For more even cooking, allow the seasoned pork belly to sit at room temperature for at least 20 minutes before placing it in the air fryer. This helps the meat relax and cook more consistently throughout.
  • Embrace the Fat: Do not discard the fat! The fat layers are what render down, becoming incredibly tender and then spectacularly crispy. This crispy, rendered fat is arguably the best part of the pork belly bites, contributing immensely to their flavor and texture.
  • Pat Dry for Crispiness: Before seasoning, always pat the pork belly thoroughly dry with paper towels. Excess moisture is the enemy of crispiness, as it causes the pork to steam instead of fry. A dry surface allows for better browning and crackling.
  • Don’t Overcrowd the Basket: Cook the pork belly in a single layer, ensuring there’s enough space for air to circulate around each piece. If your air fryer basket is too full, the pork will steam rather than crisp, resulting in a less desirable texture. Cook in batches if necessary.
  • Shake or Flip Regularly: During the cooking process, especially in the crisping stage, shake the basket or flip the pork belly pieces every few minutes. This promotes even browning and ensures all sides get delightfully crispy.
  • Serve Immediately: For the ultimate crispy experience, serve the pork belly bites hot and fresh out of the air fryer.
  • Versatile Serving: Enjoy these flavorful bites with fresh lime wedges and a drizzle of your favorite hot sauce as a fantastic appetizer, or transform them into a satisfying main course alongside rice, beans, or a fresh salad.

What Exactly Is Pork Belly?

Pork belly is a succulent cut of meat that comes from the underside of the pig. It’s an uncured, unsmoked, and untrimmed cut, meaning it contains layers of both meat and a generous amount of fat. This rich fat content is precisely what makes pork belly so incredibly flavorful and tender when cooked properly. Unlike bacon, which is cured and smoked pork belly, the raw form offers immense versatility in cooking. When deep-fried or air-fried, as in this recipe, the fat renders and the skin crisps up to create a truly irresistible texture, making it a beloved ingredient in cuisines worldwide, from Asian braises to Latin chicharrones.

Serving Suggestions for Your Crispy Bites

These versatile air fryer pork belly bites can be enjoyed in numerous ways. For a classic Latin meal, pair them with Congri or a hearty serving of Cuban black beans and white rice. They also make an outstanding appetizer on their own, perhaps with a side of spicy mayo, a vibrant chimichurri, or a simple squeeze of fresh lime juice and a dash of hot sauce to cut through the richness. Consider adding them to tacos, salads, or even alongside fried plantains for a complete and delicious culinary experience.

Storing and Reheating Leftovers

If you happen to have any leftovers (it’s a rare occurrence with these!), store them properly to maintain their quality. Place the cooked pork belly bites in an airtight container and refrigerate for up to 2 days. To bring them back to their crispy glory, the air fryer is your best friend. Simply place the chilled bites back into the air fryer basket and reheat for 2-3 minutes at 400 degrees F (200 degrees C), or until they are hot and re-crisped. Avoid the microwave, as it will make them soft and chewy.
