  • ¼ cup mayonnaise
  • 2 teaspoons lemon juice
  • 1 tablespoon of chives, finely chopped + more for garnish

  • In a medium-sized mixing bowl, combine the mayonnaise, fresh lemon juice, finely chopped chives, fresh tarragon, loosely packed lemon zest, paprika, cayenne pepper, and a generous pinch of salt and pepper. Whisk or stir thoroughly until all ingredients are well combined and the aioli is smooth and creamy. If time allows, cover the bowl with plastic wrap and refrigerate for at least an hour. This resting period allows the flavors to truly meld and develop. If you’re short on time, you can proceed directly to the next step.
  • Add the cooked, cooled, and chunky lobster meat to the prepared lemon aioli. Gently fold the lobster into the aioli using a spatula.
