  • 3/4 cup chicken stock
  • 1 cup heavy cream
  • 2 cups spinach , fresh

  • 1/4 cup parmesan cheese, fresh

  • Season the chicken on both sides with Cajun seasoning, including under the skin for bone-in thighs.
  • Add the oil to the Instant Pot and press the “Saute” function. Allow the oil to heat until shimmering.
  • Carefully place the seasoned chicken thighs into the hot oil. Cook for 4 minutes on each side until nicely browned and a golden crust forms. Remove the chicken from the Instant Pot and set it aside on a plate.
